Tarta de Manzana (Appeltaart)
Ingredientes
para la masa:
Harina -300 grs.
Azúcar – 100 grs.
Mantequilla – 200 grs.
Sal – 1/2 cucharadita
Huevo – 1
agua fría – 2 cucharadas
para el relleno:
Uvas pasas – 60 grs.
Pan rallado – 60 grs.
Azúcar – 100 grs.
Maizena – 2 cucharadas
Canela en polvo – 4 cucharadas
Manzanas – 8 (1,200 kgrs.)
Preparación
de la masa:
1. Mezclamos el harina con el azúcar y la sal, añadimos la mantequilla cortada en cubos, el agua y el huevo y amasamos hasta obtener una masa homogénea.
2. Envolvemos la masa con film transparente y la dejamos reposar 30 minutos en la nevera.
3. Cortamos 2/3 de la masa y la trabajamos con el rodillo sobe una superficie enharinada, hasta que esté fina. La colocamos en el molde previamente engrasado con mantequilla. Para que no se nos rompa la masa, la podemos enrollar en el rodillo y luego ir colocándola sobre el molde poco a poco.
4. Le damos forma, haciendo que la masa cubra todo el molde, y a continuación añadimos el pan rallado (esto hará que la base de la tarta no quede húmeda o blanda cuando absorba el líquido de las manzanas). Si queremos que quede con los bordes parejos, pasamos el rodillo o un cuchillo filoso por la superficie para retirar el sobrante de masa que sobresale del molde; de lo contrario, podemos dejarla rústica, los los bordes desparejos, más artesanal.
del relleno:
1. Precalentar el horno a 180º. Pelamos las manzanas, retiramos el corazón, las cortamos en rodajas finas y las mezclamos con el azúcar, la canela, las pasas y la Maizena.
2. Rellenamos el molde con las manzanas y presionar firmemente, para que el relleno quede homogénero y que, al cortar la tarta, no se rompa ni se deshaga.
3. Preparamos las tiras con el resto de la masa que reservamos y pasamos con el rodillo hasta conseguir un espesor muy fino. Cortamos tiras de 1,5 – 2 cm de ancho y las colocamos sobre la tarta en forma de cuadrícula. Presionamos bien los bordes y pintamos con yema de huevo batida.
4. Horneamos durante 1 hora aproximadamente y la “appeltaart” estará lista para dejarla enfriar y disfrutarla.
